I really hope you guys enjoy this recipe: it's an original recipe that takes its origins from my own mind (I made it up), combining two classic flavours (it's a match made in heaven...) to create a dense, rich chocolate sponge cake, adorned with my zingy orange buttercream. You can't knock it.
So, without further ado, I give you your new favourite chocolate orange cake recipe!
Ingredients
- 250g unsalted butter
- 250g caster sugar
- 200g plain (all purpose) flour
- 50g unsweetened cocoa powder
- 3 teaspoons baking powder
- A pinch of salt
- The juice of one large orange
- 4 large eggs (5 medium, 6 small)
Topping:
- 250g unsalted butter
- 500g icing (powdered) sugar
- The juice of 2 large oranges
Method
Preheat your
oven to 180°C/Gas mark 4/350°F and generously grease and flour two round baking
tins.
Cream the
butter and caster sugar together until well combined, light and fluffy.
Gradually crack in the eggs, one at a time (to avoid curdling the mixture) and
incorporate them into the butter and sugar.
Gently sieve in
the cocoa powder in increments and employ a folding motion (it's best to use a
spatula or spoon at this point) until the cocoa powder is evenly dispersed
throughout the mixture. Repeat this step using the other dry ingredients (the
flour, baking powder and salt) until you end up with a thick, rich and chocolaty
cake batter.
To thin out the
mixture and provide flavour, now add the orange juice and stir well.

Divide the
mixture as equally as possible into your two tins, making sure to scoop up as
much mixture as you can from the bowl. Smooth it out until it becomes a flat,
even layer.
Pop the tins
into the oven and bake for approximately 20 minutes, or until a fork comes out
completely clean. The cake should be light and spring back when touched. Once
cooled, ease the cakes from their tins (with the aid of a knife if needs be)
and set both sides on two separate plates.
Now for the
frosting (my favourite part!) Cream the butter in a bowl, on its own, until it
becomes a rather light, off-white colour. This may take some time; patience is
a virtue!
Once that's all
done, add in the icing sugar in increments and beat it together with the butter
until well incorporated, but at the same time, being careful not to create an
icing sugar avalanche. Just take it slowly!
Whip in the
orange juice (I was tempted to do the dance too, don't worry, you're not the
only one) until the flavour is well distributed. This quantity provides enough
of a zing to satisfy my taste buds, but if you wish to add slightly more juice,
please do so, however, be careful not to water down the creamy, spreadable
consistency too much. If so, it will hinder you when it comes to dressing the
cake.
Taking the
freshly made frosting, spread approximately a third of it onto your preferred
side of cake. Don't worry if it ends up being slightly messy; no one will see
this part of the cake.
Next, spread
the remaining two thirds of icing over the top and the sides of the cake, using
a palette knife for added ease. Take it slowly and try to obtain a smooth
finish to the frosting.
Before serving, if desired, sieve a thin layer of cocoa powder over the top of the cake, followed by a scattering of grated orange rind; (It's all about the aesthetics!) And you're done!
This cake is best served fresh with a lovely cup of tea (too British, I know) but will last for up to 5 days if refrigerated. Trust me, If you serve this baby up to your friends and family, they'll never disown you for as long as you live! Enjoy!

I had the privilege making and tasting this freshly baked piece of heaven! The instructions were clear and easy to follow, which was rewarding, speaking as a baking novice. The zesty orange undertone running through a strong chocolate background was exciting on the pallet and although the cake was spongy with a good crumb it had enough moisture and density to hit the spot. Well done Marina, I shall use this recipe again for the next birthday that comes up.
